When Ahsoka Tano begins her Jedi journey in Star Wars: The Clone Wars, she is equipped with a single green lightsaber. Later, she chooses to wield a second Shoto Lightsaber of the same color. But when she is suspected of a crime she didn't commit, Ahsoka will have her two weapons confiscated...
At this point, Anakin Skywalker, who has a blue lightsaber, is Ahsoka's mentor. He takes advantage of the fact that his Padawan no longer has her lightsabers to "improve" them according to him. When he gives her back her lightsabers, they have turned blue, like his own.

Ahsoka owns a pair of lightsabers with flat, curved handles in various shades of gray and a hint of gold. Initially, the Togruta built these weapons from scrap metal. Then she perfected them by taking care of the finishing touches, notably with the presence of decorative lozenges on the handles. One of the particularities of these 2 lightsabers is that they are not of the same length, the smaller one being of the Shoto type.
Finally, this pair of lightsabers has white Kyber crystals. This is what gives the plasma blades this same color. In the next section, we will explain the origin of the white color obtained by these crystals.
Between the animated series Star Wars: The Clone Wars and Star Wars Rebels, the plucky Ahsoka switches from blue lightsabers to white lightsabers. It's natural to wonder where this change came from and how it happened. To get an answer to that question, you'll have to dive into the novel about Ahsoka written by E. K. Johnston published in 2016. Indeed, the book is entirely devoted to Ashoka Tano's past, after her decision to leave the Jedi Order. Following the execution of Order 66, she is continually forced into hiding to survive. However, she eventually faces an Inquisitor on Raada: the Sixth Brother, whose real name is Bil Valen.
As the Inquisitor's crystals call to the former Jedi, she uses her mastery of the Force to remove them from the owner's lightsaber. This maneuver causes the weapon to explode, killing the sixth brother... Ahsoka then uses the Inquisitor's red crystals to build her own lightsabers.
However, she first purified them from red to white. This process is reminiscent of the bleeding ritual that, in reverse, corrupts Jedi crystals to a scarlet hue. Ahsoka's skills allowed her to heal the crystals of the dark side's influence. This was in order to use them for her 2 white lightsabers..
According to Dave Filoni, who was heavily involved in The Mandalorian, the white of Ahsoka's lightsabers symbolizes the fact that she is neither a Jedi nor a Sith. It is a color that represents independence, neutrality, goodness and purity. Also, white represents opposition to the dark side that she has never stopped fighting. Ahsoka Tano would be even purer than the Jedi since she is not attached to any side or historical past, she only works for the good of the galaxy. Hence the choice of the color white.
Ashoka Tano's atypical white lightsabers have been seen on screen many times. This concerns both live action and animated series. Let's review in chronological order the works that revealed these sparkling weapons to the audience.
The very first appearance of Ahsoka Tano with her white lightsabers was in the last episode of the first season of Star Wars Rebels. Indeed, in the episode named "Galaxy in Flames", Ahsoka (who was hiding under the pseudonym Fulcrum) shows up with 2 new lightsabers hanging from her waist. As you might expect, these are the white colored sabers that Ashoka made. These weapons will oppose Maul wielding a double lightsaber, Darth Vader and several Inquisitors in this same series.
The Mandalorian live action series surprised its fans greatly in the second season with the fifth episode "The Jedi". Although the entire plot of the series converges on the Mandalorian black lightsaber, another rare type of weapon shows up... The unexpected white lightsabers burst into Calodan in the hands of Ashoka, played by actress Rosario Dawson. She meets Grogu and Din Djarin, played by Pedro Pascal, with whom she will collaborate. Together, they managed to save the city from Morgan Elsbeth, the magistrate. It is thus in this episode (and only this one) that Ahsoka Tano will use her white lightsabers to fight in The Mandalorian.
Finally, the Star Wars: Ahsoka series has not been released yet, but it is extremely likely that we will see the heroine with her white lightsabers. It should be noted that this is a spin-off of The Mandalorian, so it seems logical that she will be equipped with the same pair of weapons. We will have the chance to see Rosario Dawson again in the role of Ahsoka Tano. The little we know about the summary indicates that she would be looking for Grand Admiral Thrawn because Ezra Bridger disappeared with him before.
